Shiitake mushroom Lentinula edodes “The Flexible Food Mushroom”

If eaten regularly it reduces cholesterol, anti-viral, lowers blood pressure, cardiovascular, reduces cholesterol, increases libido, and has anti-cancer effects. Anti-tumor and immune stimulation seem to be the most widely researched effects. It also appears to have antibiotic, and liver protection effects.
   It has been used to treat common cold for hundreds of years. Studies have shown that shiitake mushrooms could alleviate the damage of pancreatic β-cells, promote insulin synthesis and lower plasma glucose levels. An ex-polymer of L. edodes reduced plasma glucose and increased insulin synthesis in streptozotocin-induced diabetic rats compared to normal rats ^[8].
