Shiitakes are also unique for a plant because they contain all eight essential amino acids, along with a type of essential fatty acid called linoleic acid. Linoleic acid helps with weight loss and building muscle. It also has bone-building benefits, improves digestion, and reduces food allergies and sensitivities.

It is known to suppress leukemia cell proliferation. The ethanol extract of this mushroom significantly decreased cell proliferation of CH72 cells, whereas it could not change the proliferative response of the non-tumorigenic keratinocyte (C50) cell line.

A 2006 study published in the Journal of Alternative and Complementary Medicine investigated the potential roles of an ethyl acetate fraction from shiitake mushrooms. The study involved two human breast carcinoma cell lines, one human nonmalignant breast epithelial cell line and two myeloma cell lines. The results suggest that shiitake mushrooms were able to inhibit growth in tumor cells with their mycochemical value.   1. edodes or “shiitake mushroom” has been used for many years to investigate functional properties and to isolate compounds for pharmaceutical use; this is because of its positive effects on human health. It has been utilized to alleviate the common cold for hundreds of years and some scientific evidence has supported this belief. Finimundy et al. have provided experimental information about the aqueous extracts of L. edodes as potential sources of antioxidant and anticancer compounds. These extracts significantly decreased cell proliferation on tumors as well. Shiitake produces lentinan and β-glucan that suppress leukemia cell proliferation and have antitumor and hypocholesterolemic activity. Lentinan is used in clinic assays as an adjuvant in tumor therapy and specifically in radiotherapy and chemotherapy. On the other hand, it has been reported that lentinan enhances host resistance against infections by bacteria, fungi, parasites, and viruses; it also promotes nonspecific inflammatory responses, vascular dilation, hemorrhage-inducing factors activation, and generation of helper and cytotoxic T cells.
